Oatmeal Cookies w/ Vosges Smoke & Stout Caramel Bar

Last fall I posted a short series where I shared my Grandma’s Oatmeal Cookie Recipe and three different variations of these highly addictive cookies.  The variations included Toasted Hazelnuts & Nutella, Pumpkin & Toasted Pecans, and the use of Vosges Woolloomooloo Bar.  But being the glutton that I am, I couldn’t leave well enough alone and recently I began experimenting with a few new enticing twists to Grandma’s cookies.

So after “weeks” of experimenting and consuming the Oatmeal Cookie Series continues today with a variation that once again relies on a Vosges speciality chocolate bar to create a sensational cookie.

Vosges Smoke and Stout Caramel Bar is a combination of Rogue Ale’s Chocolate Stout beer, Alderwood smoked salt, burnt sugar caramel, and 70% dark chocolate.  As if this gooey chocolate creation doesn’t sound good enough on its own, when mixed with the oatmeal cookies, the bar dissolves infusing the batter with rich notes of bitter dark chocolate, burnt caramel, and a hint of smokiness.

To be sure this is a dark twist on the cookie, but it’s one that all my cookie tasters resoundingly approved of.

The Necessities:*

  • 1 1/4 sticks of butter (room temperature)
  • 1 cup of light brown sugar
  • 2 cups of quick oats
  • 1 cup of flour
  • 3/4 tsp of salt
  • 1 tbsp of vanilla extract
  • 1/3 cup of water
  • 1 Vosges Smoke & Stout Caramel Bar

*One batch will make roughly 14 cookies

Directions:

  • Preheat your oven to 350 degrees.

  • Toss the butter and brown sugar in the bowl of a stand mixer and combine on a low speed.

  • In a separate bowl mix the oats, flour, and salt.

  • Then toss this mixture in with the butter and brown sugar.

  • Mix on a medium-low speed until the mixture looks something like above.

  • In a measuring cup combine the water and vanilla extract. Turn the mixer on a medium-low setting and gradually pour the water/vanilla into the bowl.

  • Carefully break up the Smoke & Stout Caramel Bar and toss in with the batter.

  • Continue to mix the ingredients on a medium setting until the bar squares are broken up into small chunks and thoroughly combined.

  • Spoon out big gobs of cookie dough onto a baking sheet, place the sheet in the oven, and bake for around 14 minutes.
  • Remove the cookies from the oven and allow them to cool for a few minutes on a rack.

  • Place cookies around Vosges package, take picture, and eat entire batch in one sitting (optional).

    I once told you that oatmeal cookies were a favorite of mine. You just took them to a whole new level. I think, though, that rather than make 14, I’ll make 6. It won’t sound so bad when I say that I ate 6 cookies instead of 14 because, either way, I am going to eat them all. No doubt about it.

    Oatmeal cookies are always a great one for the cookie jar. Since you have done so many spin offs from the original recipe, tells me that the original recipe is well worth a try. However, tossing in a few chunks of some exotic chocolate bar can only make them better-yum! Thanks for posting this one!

    These just look plain EVIL…and I mean that in the best possible way. How could all those flavors not be terrific together. If I see one of this particular flavor of Vosges bar, I’ll buy it just so I can make these cookies!

    Wow! I make a mean oatmeal chocolate chip cookie, looks like I need to tinker with it. I have to ask a silly question, though, please forgive. I live in the middle of the US, in a land of meat and potatoes, and sometimes not much else. To find really good chocolate is a stretch. Where did you get yours? I may have to beg a friend to send me some!

    Jed, my friend, you are KILLING me. It’s day three of the diet to end all diets and all I can think about, as I relish my second delicious salad-meal of the day, is a double batch of these cookies with a whole milk chaser. For breakfast.

      You have to rethink your position here. Oatmeal cookies are extremely healthy for you, as is beer, and chocolate. So the there is should be plenty of room in everyone’s diet for these. ;-)

        Love it, thank you. Somehow have oatmeal cookies makes you think you’re doing something right, regardless of the sugar involved. I had an idea, not knowing how smoky the smoke and stout caramel bar is, but you can actually buy liquid smoke, but a little goes a long way (note to self, must check the expiry date on ours!) and there are Skores which are little crunchy bits of caramel…just a thought.

        I always have a bottle of liquid smoke in the house, but I think I would shy way from using it simply because of how potent it is. A sprinkle of smoked salt seems to be the safer route to go. I’ve never heard of Skores before…is that a Canada thing?

    The oatmeal cookies sound extraordinary!
    I think this bar was created for me and only for me: I love salted caramel and I love good stout (read Guinness), so luckily it doesn’t exist here because I would be addicted.

    I’ve never had Vosges chocolate before. But anything with the name “smoke stout caramel” sounds amazing. I need to keep an eye out for it so I can try these cookies…they look delicious! :)
