Oatmeal Cookies w/ Peanut Butter & Roasted Peanuts
The Oatmeal Cookie Series continues today with another scrumptious variation of my Grandma’s recipe: Oatmeal with Peanut Butter & Roasted Peanuts. The cookies are a perfect balance between the flavors of a peanut butter and oatmeal cookie, with freshly toasted roasted peanuts adding a richness and textural crunch. If you’re a lover of either of these types of cookies then you’ll appreciate the harmonious combination of the two found in this variation.

The Necessities:*
- 1 1/4 sticks of butter (room temperature)
- 1 cup of light brown sugar
- 2 cups of quick oats
- 1 cup of flour
- 3/4 tsp of salt
- 1 tbsp of vanilla extract
- 1/3-2/3 cup of water
- 1/4 cup peanut butter
- 3/4 cup dry roasted peanuts
*One batch will make roughly 16 cookies
Directions:
- Preheat your oven to 350 degrees.
- Toss the butter and brown sugar in the bowl of a stand mixer and combine on a low speed.
- In a separate bowl mix the oats, flour, and salt.
- Then toss this mixture in with the butter and brown sugar.
- Mix on a medium-low speed until the mixture looks something like above.
- In a measuring cup combine 1/3 cup water and vanilla extract. Turn the mixer on a medium-low setting and gradually pour the water/vanilla into the bowl.
- In a small frying pan over medium heat toast the peanuts.
- Toss the toasted peanuts and peanut butter in with the batter.
- Continue to mix the ingredients on a medium setting until the peanut butter and peanuts are thoroughly combined. Mix in small amounts of water to the batter until the preferred consistency is reached (I added about 1/4 cups).
- Spoon out big gobs of cookie dough onto a baking sheet, place the sheet in the oven, and bake for around 14 minutes.
- Remove the cookies from the oven and allow them to cool for a few minutes on a rack.
- Enjoy multiple cookies with a cold glass of milk.

The roasted peanuts must add an incredible amount of flavour and texture.

Nothing but roasted goodness.
I’m thinking these would be delightful dipped in a little chocolate! Dark chocolate, you know, the healthy kind.
Oh ya…I know exactly what you are talking about!
Bad enough I have a list of your recommended beers and wines to buy. Now, I’ve got a list of your oatmeal cookies to bake! Yet, you haven’t made one simple pasta nor cheese at home. This just isn’t fair! And, yes, these cookies sound really good. They made the list, didn’t they?
I know I know…I’ve got to get the homemade pasta series going.
I love your peanut Butter & Oatmeal cookies…anything sweet with peanuts I am crazy about. Great simple recipe. Thanks.
Thanks Teresa!
I remember you sharing this wonderful recipe before…and I love that oatmeal cookies can be tweaked in so many delicious ways!
It’s the simple things in life ya know.
These are a fantastic variation! This would go down a treat with the americans of the household! c
Sounds so yummy!
I just love the look of these. They must taste great too with the peanut butter and peanuts in them – great flavour and crunch xx
Thanks Charlie and indeed they are!
I absolutely LOVE oatmeal cookies, Jed. And the addition of peanuts just sound lip smacking! Yum.
The oatmeal reminded me of last year, we were at my brother’s cottage and we took a trip down to the marina. They were having some sort of celebration and had cookies and coffee out for all to enjoy. The kids went wild and I stayed away until I spied the largest oatmeal cookie ever. It was a splurge but well worth it, crispy on the outside, chewy in the middle. I broke it in half just as my sister-in-law was approaching the table, and I offered the other half to her. Just as she reached out to grab it, she asked what kind of cookie it was, and I said oatmeal. All of a sudden a look of horror overtook her face as she jumped back from me. You would have thought I offered her bull-dung cookies. Anyway, it seems that she hates oatmeal cookies almost as much as Madonna hates Hydrangeas. http://www.theglobeandmail.com/life/the-hot-button/madonna-responds-to-hydrangea-incident-not-with-an-apology/article2163492/

Someone who hates oatmeal cookies? That just won’t do! And by the way one of my guilty pleasures is making huge versions of the oatmeal cookies and then taking…oh wait that is a idea/recipe for future post.
Mmmmmm…..now I’m craving peanut butter cookies…I’ve actually never tried them with oatmeal…and now I want to..they look so yummy!
It was my first time mixing the two together and it really was fantastic.
Those are whole peanuts in the cookies? Roasted whole peanuts? I LOVE the idea. How absolutely fantastic. Your Grandma’s cookies are pretty freakin’ amazing.
Yes they are and it makes all the difference.
Thanks Christiane!
Man, you really like your oatmeal cookies. I love peanuts so this is up my alley. All of them have looked great.
The doctor told me oatmeal is good for the heart, so I try to keep things healthy around here.
I bet the roasted peanuts really made these stand out. I make an oatmeal cookie with crunchy peanut butter and it’s hard to believe just how much additional flavor the bits of peanut add each time!
Yum. Am making them this week. What do you think about adding chocolate chips? I love your blog: sports and great food. What more could a girl want?
The addition of chip chocolate chips is the next step and I just wanted to get the base mixed right this time. Only question is what type of chocolate and which percentage of cacao?
And thanks as always Stacie!
I am not a big fan of peanuts in sweet dishes (as well as peanut butter), but these cookies look fantastic and I’m sure they please all the peanut fans.
How much do I love that you’ve had a whole series on your Grandma’s oatmeal cookies! Yum!
Wow! These look amazing. I can’t wait to try this recipe
It would really be hard to eat just one of these cookies. Very dangerous to have in the house…delicious but dangerous.
