New York Yankees: Stella D'oro Cheesecake Recipe IMG_2400

“Stella D’oro…breakfast treats anytime.” One of my favorite comedians, Patton Oswald, once did a hilarious bit based on an old Stella D’oro commercial using this line.  Because of this I became enamored with the idea of Stella D’oro’s before ever consuming any of their “tasty” treats. But after years of me reciting the quoted line, my better half from NYC decided enough was enough and it was time that I familiarized myself with the finer things in life.

Thus in spite of being a life long New York Mets fan, Liz created the following cheesecake recipe using Stella D’oro treat to represent her hated inter-city rivals the New York Yankees as part of our MLB Recipe Series.

This straightforward/standard cheesecake filling receives it’s Italian touch with a Stella D’oro Margherite Cookies crust that is garnished with Stella D’oro Swiss Fudge Cookies. It’s Italian/American excellence in dessert form and something any cheesecake lover can get behind…even if they’re a Red Sox fan.

The Necessities:

  • 16 Stella D’oro Margherite Cookies (chocolate and vanilla combo or a single flavor)
  • 6 tbsp butter – melted
  • 1 tbsp sugar

  • 3 bars/24oz Philadelphia cream cheese – at room temperature (1/3 less fat, but regular cream cheese will work)
  • 1 cup plain Greek yogurt (0% fat, but any type will do)
  • 3 tsp vanilla
  • 1 cup sugar
  •  3 eggs
  • Pinch of salt

  • Stella D’oro Swiss Fudge Cookies

  • Preheat the oven to 300 F.

  • Toss the cookies into a food processor and grind away.

  • Add the butter and sugar. Hit the pulse button for another 30 seconds or so until it looks like wet sand.

  • Pack the crust into the bottom of an ungreased springform pan. Make the crumb layer a little thicker towards the edge.
  • Bake the crust for 10-13 minutes in the preheated oven. It should be a little toasty smelling. Remove and set aside. Butter the exposed sides of the pan when cool enough to handle.

  • Increase oven temperature to 500 F.
  • Blend the cream cheese, sugar, and Greek yogurt in your food processor until smooth. Add the remaining ingredients and blend for another 30 seconds – 1 minute until smooth and fully incorporated, scraping down the edges.

  • Pour the filling evenly over the crust. Tap the pan on a hard surface to bring air bubbles to the top.

  • Bake at 500 F for 10 minutes. Without opening the oven, turn the temperature down to 200 F and bake for 1+ hours – until the internal temperature of the cheesecake filling is 150 F.

  • Set aside to cool for an hour, remove the springform sides, cover with plastic, and refrigerate for 3 hours. To serve, top with Stella D’oro Swiss Fudge Cookies, and resist the desire to have more than one slice.

During my first trip as an adult to the Big Apple (first year University) one of the things we did was head over to Lindy’s for their famous cheesecakes! When I returned home I was absolutely obsessed with baking cheesecakes! During this time I discovered a way to avoid the cracked top: allow it to cool in the oven, it’s the slow cooling process that helps to mitigate the cracks!
This recipe sounds lovely, I’ve always been a huge fan of baked cheesecakes.

NY style cheesecake is our favorite. I haven’t tried using Greek yogurt in a recipe before, but the tang would suit me. Great recipe!

This sounds like a good cheesecake, Greg — and I do love a good cheesecake. It has to be. It uses Stella D’oro cookies — and I don’t live in a basement. (Just had to make that last point clear.)
