Portabella Stuffed MushroomsSimple, quick, and yet gluttonous…all of this can be yours with our latest rendition of stuffed portobello mushrooms with a base of ground beef and quinoa.  So saddle up, enjoy, and we guarantee these stuffed mushrooms won’t taste “like a dirty old tree branch!”

The Necessities:

  • 1 lb ground beef
  • 2/3 cup cooked quinoa
  • 2 scallions, chopped
  • 1/4 cup grated parmigiano regiano
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/4 chopped fresh Parsley
  • 2 tbsp ketchup
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 4 portobello mushroom caps

Glaze

  • 2 tbsp tomato paste
  • 2 tbsp ketchup

Directions:

  • Preheat your oven to 350.
  • Baked the portobello mushroom caps for 5-10 to dehydrate them a touch.
  • Mixed together all the remaining ingredients in a large bowl.
  • Stuff the portobello mushroom caps with equal amounts of the filling.
  • Mix together the glaze of tomato paste and ketchup, lathering to the top of each filling.
  • Bake in the oven for 20-30 minutes or until caps are browned.
